i figured it was time to add a new recipe. i experimented tonight and came up with some very excellent din din. i was so proud of it. anyway, here goes...
heat oven to 350 degrees.
on medium heat, warm 1/8 c. of olive oil in a medium skillet. add 3 cloves of minced garlic, chopped onion (about half a med sized one), and 2 pork chops seasoned with salt and pepper. brown pork chops about 5 min. on each side.
while browning, mix a can of cream of mushroom soup with 3/4 c. of milk in a small bowl.
once, chops are browned move them to a small baking dish. add the sauteed garlic and onions to the soup mixture (gravy). add pepper to taste.
pour gravy over pork chops and bake for 45 min at 350 degrees.
i served this with mashed potatoes and asparagus.
mashed potatoes - left the skin on and used butter, sour cream, salt and pepper to mash. they tasted great with the gravy.
asparagus - sauteed in olive oil with 3 cloves of minced garlic, salt and pepper. delish!

Hawaiian Chicken
I finally made hawaiian chicken last night and took a picture to share with the recipe.
3 Chicken Breasts, cut into 1/2 inch cubes
2 green onions, chopped
2 cups of shredded cheese
1 can of pineapple rings
4 strips of bacon
Teriyaki Marinade
1. Marinade the chopped chicken in a teriyaki marinade, either a purchased bottle or you can use this excellent recipe that i use...http://allrecipes.com/Recipe/Teriyaki-Marinade/Detail.aspx. I usually marinade it for 1-2 hours.
2. Drain the chicken and lay it down the center of a baking sheet. Put in the oven at 350. Cook for 15-20 minutes.
3. While the chicken is cooking, cook the bacon until it is half done. Tear it into little pieces. You'll also have time for other prep such as shredding the cheese and cutting the green onions.
4. When the chicken is about done, take it out of the oven and place the pineapple rings along each side (like shown in the picture). Then put the shredded cheese all over the chicken and sprinkle onions and bacon over the cheese.
5. Put back in the oven for approx. 10 minutes.
I usually serve this with different rice concoctions. Last night I made rice with some of the pineapple juice and bits of green onion and mushrooms. You could also do rice with green onion and almonds. I also serve a vegetable or salad as a side.
