Quick, Easy & Yummy Pork Chops

i figured it was time to add a new recipe. i experimented tonight and came up with some very excellent din din. i was so proud of it. anyway, here goes...

heat oven to 350 degrees.

on medium heat, warm 1/8 c. of olive oil in a medium skillet. add 3 cloves of minced garlic, chopped onion (about half a med sized one), and 2 pork chops seasoned with salt and pepper. brown pork chops about 5 min. on each side.

while browning, mix a can of cream of mushroom soup with 3/4 c. of milk in a small bowl.

once, chops are browned move them to a small baking dish. add the sauteed garlic and onions to the soup mixture (gravy). add pepper to taste.

pour gravy over pork chops and bake for 45 min at 350 degrees.

i served this with mashed potatoes and asparagus.

mashed potatoes - left the skin on and used butter, sour cream, salt and pepper to mash. they tasted great with the gravy.
asparagus - sauteed in olive oil with 3 cloves of minced garlic, salt and pepper. delish!

Hawaiian Chicken

I finally made hawaiian chicken last night and took a picture to share with the recipe.

3 Chicken Breasts, cut into 1/2 inch cubes
2 green onions, chopped
2 cups of shredded cheese
1 can of pineapple rings
4 strips of bacon
Teriyaki Marinade

1. Marinade the chopped chicken in a teriyaki marinade, either a purchased bottle or you can use this excellent recipe that i use...http://allrecipes.com/Recipe/Teriyaki-Marinade/Detail.aspx. I usually marinade it for 1-2 hours.
2. Drain the chicken and lay it down the center of a baking sheet. Put in the oven at 350. Cook for 15-20 minutes.
3. While the chicken is cooking, cook the bacon until it is half done. Tear it into little pieces. You'll also have time for other prep such as shredding the cheese and cutting the green onions.
4. When the chicken is about done, take it out of the oven and place the pineapple rings along each side (like shown in the picture). Then put the shredded cheese all over the chicken and sprinkle onions and bacon over the cheese.
5. Put back in the oven for approx. 10 minutes.

I usually serve this with different rice concoctions. Last night I made rice with some of the pineapple juice and bits of green onion and mushrooms. You could also do rice with green onion and almonds. I also serve a vegetable or salad as a side.

ENJOY!!

"Wanted" Recipes...

ok i'm posting the links to the "wanted" recipes that i've made so far and have links on the web. later this week i'll post the ones that i have to type out. and i'll post the others as soon as i make them and have tips for you. the stars beneath the links are just some changes that i made to the recipe.
Ratatouille
http://allrecipes.com/Recipe/Ratatouille/Detail.aspx
*i put it in a 9x9 pan and just cut vegetables up as i needed them and cooked up some angel hair pasta to serve it over...other than that i stuck to the recipe
Chicken Pot Pie
http://allrecipes.com/Recipe/Chicken-Pot-Pie-IX/Detail.aspx
*i used the premade pie crusts cuz it's way quicker but next time i think i'll make my own crust. i added potato and sauted a couple garlic cloves (instead of celery seed) with the onion. beat egg whites and brush over the bottom crust and top crust. also, make sure you mix the vegetables and liquid mixture before dumping it in the pie pan. i think it would be less messy.
Quick & Easy Chicken Noodle Soup
http://allrecipes.com/Recipe/Quick-and-Easy-Chicken-Noodle-Soup/Detail.aspx
*i cooked onion, celery, and carrots in butter with a couple crushed garlic cloves. i also added a pinch of dried thyme.
and...if you ever need new recipe ideas go to www.allrecipes.com. that's where i get a lot of recipes when i feel like trying something new. i always make the 4.5 to 5 star recipes and read over some of the reviews to master it before i make it.

My bright idea...

so i thought after the response on my other blog of friends needing new recipes, i would start a recipe blog to share some ideas. i hope also that others will want to share their fave recipes so we can all be happy and full of yummy food. anyway, i'll experiment for a lil while and see if anyone even uses this.
